Method and Madness 33 Year Old Mizunara Oak Cask
Sprung from the minds of master and apprentices, Method and Madness is a whiskey that pays heed to tradition, while searching for the unordinary.
This whiskey’s story began in 1988 in a bourbon barrel before curiosity got the better of us. After its 30 year start, it was refilled into this rare Mizunara cask from Japan for three years. The result, a perfect harmony of spicy pot still and perfumed oak.
Nose: coffee cake, toasted nuts, worm leather
Taste: nutmeg, vanilla, wood tannins
Finish: pot still spice, subtle fruits, fresh oak

This limited-edition release was initially matured in a combination of ex-bourbon and sherry casks, then finished in acacia casks. This calculated risk yields the rewards of the acacia’s tight grain, imparting a rich, nutty, chocolatey flavour, complemented by a mahogany hue.

Method and Madness Single Pot Still Cedarwood Casks
Our masters encourage our apprentices to think outside the barrel and these casks are no different. From Kyoto, our Japanese cedarwood casks have had quite a journey, one sip, and we think you’ll like it.
Nose: eucalyptus, fresh botanicals, balsamic undertones
Taste: herbal tea, caraway seeds, clove spice
Finish: Delicate fruits, sweet-scented wood, rich spices

Method and Madness Single Pot Still Chestnut Casks
The quest for uncommon casks led us to Japan and a first for Irish Whiskey. Virgin Japanese chestnut casks married with single pot still whiskey, a curious combination with a different taste.
Nose: peppermint leaves, caramelized almonds, ground pepper
Taste: licorice, orange zest, cooling menthol
Finish: herbal fruits, roasted coffee, lingering spices
