A Legacy of Innovation
In 1789, Elijah Craig became the first to char oak barrels to make Bourbon, earning the title ‘Father of Bourbon’. The new Elijah Craig Toasted Rye pays homage to this legacy, adding complex layers of soft and creamy milk chocolate to the characteristic spice notes of Elijah Craig Straight Rye.
The Toasting Process
The journey of Elijah Craig Toasted Rye begins with fully matured Elijah Craig Straight Rye Whiskey, which is then re-entered at barrel proof into a second, custom toasted new oak barrel. Designed in partnership with Independent Stave Company, these unique secondary barrels are toasted to impart additional layers of flavor. A high-temperature cap applied at the end of the toasting process embeds phenols into the barrel’s surface, adding an element of smoke that perfectly complements the rye’s natural spice and sweetness.
Tasting Notes
Elijah Craig Toasted Rye greets you with an inviting aroma of toasted oak, crème brûlée, almond, and hazelnut. On the palate, you’ll experience notes of milk chocolate and subtle baking spices, all enveloped in a creamy mouthfeel. The finish is soft and warm, with lingering, drawn-out spices that leave a lasting impression.

Crafted with a traditional mashbill of 51% rye, 35% corn, and 14% malted barley, Elijah Craig Toasted Rye embodies the classic rye spice balanced by the sweetness of corn. The finishing period in the secondary toasted barrel adds the perfect amount of balance to this exceptional rye whiskey.

Ellsworth Reserve 5 Year Old Border Bourbon
Our “Full Circle” of Local Production
45th Parallel’s process is a full circle local production and begins when we pick up grain from Rusmar farm. We then mill, mash, ferment, and distill it all within our facility. Afterwards, the grain is shipped to another local farm where it is used as feed for livestock. Naturally, the livestock turn the grain into fertilizer for next year’s crops.
Slow Distillation
When you conduct slow distillation you can separate all the different components and respect your temperatures during the process. Today many “craft” distillers use a hurried approach that minimizes, or even rejects these frameworks.
Slow Maturation
When you understand that time is a factor you cannot control, you focus on the ones you can. Temperature and humidity are two very important elements in the maturation process. Many try to speed up the aging process by using higher temperatures and using smaller barrels. This results in the hard and disproportionate amount of tannins. There is no substitute for time. It is a fundamental part to achieve high-quality products.
Today many distillers care more about maturing their spirit quickly with wood extracts. A traditional slow maturation process results in a full-bodied flavor that can only be accomplished from years in high-quality wood barrels.
Time is constant and cannot be controlled. We don’t try to.

Elvis Whiskey
Elvis Presley was a man of many nicknames, including Tiger Man, the King of the Jungle. Some say it was his dad who first called him Tiger Man, some say it was a fan, either way, the name was a perfect fit.
Elvis first performed the song, ’Tiger Man’ in concert in Las Vegas in 1969 and continued playing it throughout the years – usually in a medley with Mystery Train, singing it over 150 times on stage!

Emmets Irish Whiskey
Emmets Irish Whiskey presents a proprietary blend of grain, double-distilled malt, and triple distilled malt. The grain spirit provides an essence of vanilla and toffee that’s present on the nose and in the flavour. The double-distilled malt adds in fruity esters and overall body while the triple distilled malt sets up a complex mineralogy finish that supports the sweetness of the blend. Empirical Ayuuk
The smoky Pasilla Mixe chilli is the hero here. We source it directly from Mixe farmers in the mountains of Oaxaca, Mexico, and macerate it in a spirit made from Danish heritage purple wheat and Pilsner malt. After distillation, we blend the most desirable cuts. This blend is then rested in a sherry cask, allowing the flavors to infuse and mature with each other, giving a smooth, distinct and savoury finish.

Empirical The Plum, I Suppose
The kernel inside plum stones is the foundation of this spirit. Rather than tasting of stone fruit, the kernel lends a marzipan, bitter almond flavor. Distilled marigold kombucha brings another side of floral and tannic notes reminiscent of plum skins; the combination is sort of the suggestion of plum, hence the reference to the Robert Frost poem. Equiano Rum
$59.99Equiano starts its journey at Gray’s distillery in Mauritius, where the Rum is made from local molasses and barreled for a minimum of 10 years in a combination of French Limousin Oak and ex-Cognac casks, giving the liquid complexity and depth of flavor. It is then sent to the Barbados to be married and vatted with rum from the award-winning Foursquare Distillery; Rum that has been barreled in American oak casks that had previously aged Bourbon.
On the nose, it delivers tropical warmth alongside notes of dried fruits such as raisins combined with sweet toffee, butterscotch, and caramel. To taste, Equiano delivers its natural sweetness from a mix of ex-cognac and ex-bourbon casks that it tropically matures in.
