Doc Swinson’s Exploratory Cask Tres Amigos Rye
Doc Swinson’s blend of two five-year mash bills was first finished in our ex-rum cask solera for an additional year before our blender decided to play around with a few Añejo tequila casks. The result is a plethora of flavors starring rich and spicy whiskey, supported by peppery and sweet agave and funky fruity rum; a true piñata of goodness. Remember, wherever good drinks and great times are to be found, you will find the Tres Amigos!

Doc Swinson’s Garryana Straight Bourbon
Exploring new oak species has been a major focus for our Master Blender, Jesse Parker and when the opportunity to work with our own local Pacific Northwest oak, Quercus Garryana, Jesse jumped on the opportunity. Quercus Garryana, or more commonly called Oregon oak is found growing on the Pacific Coast from Northern California to Southern British Columbia, it runs through Doc Swinson’s backyard. This marriage of our signature whiskeys and Oregon oak barrels really showcases the richness of the Pacific Northwest terroir offering deep, dark, and complex notes ranging from molasses, toffee clove, Italian plum and wood smoke.

Dogfish Head Alternate Takes Vol. 4 Whiskey
In the analog age of music, artists recorded take after take, experimenting with alternate sounds until a great record emerged. For this take, we finished our aged single malt whiskey into north Samuel Adams Utopias barrels and Ooroso sherry barrels from Spain. The resulting finish provides a warming mix of port wine, hazelnut, caramel and lingering dark cherry notes.

In the analog age of music, artists recorded take after take, experimenting with alternate sounds until a great record emerged. For this take, we harvested our Whiskey & finished it in our own freshly emptied Apple Brandy barrels as well as Angry Orchard Hard Apple Cider barrels.

Our off-centered version of the traditional Mint Julep, we bottled a cocktail which combines our Alternative Takes 4 Whiskey with the subtle sweetness of Delaware-grown peaches from our friends at Fifer Orchards. Dom Pérignon Blanc Vintage 2010 Lady Gaga Introducing Dom Pérignon Blanc Vintage 2010 Lady Gaga Edition. The creation of Dom Pérignon Vintage 2010 took equal parts mastery and humility. 2010. Winter was rigorous, spring dry and late. After a particularly sunny decade, such freshness was surprising. Summer was hot, but not excessively so. Then, two days of diluvian rain brought this ideal trajectory to a halt. In just a few days, botrytis mold developed on the grapes, mainly on the pinot noir. This triggered a race against the clock. The grapes were not yet fully mature, but a decision had to be made quickly. Dom Pérignon deployed its full resources to trace a precise map delimiting the maturity and health of each parcel in its vineyards. Every minute counted. This expert vision of the situation gave the possibility of saving excellent plots of pinot noir grapes. The challenge was met, Dom Pérignon declared a vintage quite literally “saved from the waters”: Dom Pérignon Vintage 2010, fruit of intuition and mastery.
