Whiskey Del Bac American Single Malt Distiller’s Cut Fall 2023
FINISHED IN SAUTERNES & TAWNY PORT BARRELS
This mesquite smoked base single malt is matured in New American White Oak, finished in Sauternes barrels, then blended with an additional mesquite smoked single malt base finished in Tawny Port barrels. This release is cask strength.
TASTING NOTES:
On the nose, you may get a smoldering campfire and stewed plum. On the palate we taste white pepper heat up front, sliding quickly into roasted chocolate. It finishes with long and luxurious roasted cinnamon bark. We recommend serving the Fall 2023 Distiller’s Cut with one large ice cube.

Whiskey Del Bac American Single Malt Distiller’s Cut Spring 2023
This unsmoked base is matured in New American White Oak, finished in Tawny Port barrels, then blended with mesquite-smoked American single malt Petites eaux from a used bourbon barrel. Tawny tends to have a nutty, oxidative character and is often enjoyed as an aperitif, different from Port’s usual role as an after-dinner drink. Matured for over two years, this Distiller’s Cut is a perfect blend of unsmoked and mesquite single malts. This release is at cask strength.
TASTING NOTES:
On the nose, you may find raisin, oak, and leather. On the palate we get sweet, maple-forward notes, moving into a long and velvety mid-palate. It finishes fruity and light, without a hint of smoke. We recommend serving our Spring 2023 Distiller’s cut neat.

Whiskey Del Bac American Single Malt Distiller’s Cut Summer 2023
RHUM AGRICOLE BARREL FINISHED
This unsmoked base is matured in New American White Oak, finished in Rhum Agricole barrels, then blended with mesquite smoked American single malt petites eaux from a used tequila barrels. Rhum Agricole differs from rum in that it’s distilled directly from pressed cane sugar instead of fermented juice or cane byproducts like molasses. This release is cask strength.
OUR NOTES
On the nose you may get fermented peach and nectarine. On the palate we taste hints of tobacco smoke at the start with peach and nectarine across the mid palate, finished bright and blanked. We recommend serving the Summer 2023 Distiller’s Cut neat.

The medieval city Jerez de la Frontera sits on what was once the edge of Spain and is known as the world capital of sherry wine. The once border city still embodies a cultural richness that is common where countries meet.
Frontera
Frontera is our handcrafted Classic American Single Malt, matured in new American White Oak and finished in specially selected Pedro Ximénez Sherry botas. Pedro Ximénez is made from overly ripe grapes of the same name, dried in the sun to obtain an exceptionally high concentration of sugar.
Our Notes
On the nose, you may find raisin, walnut, and crushed red grape skin. On the palate, we taste heavy vanilla. Stone fruits, followed by bright acidity, finishing with lingering honey, oak and leather. We recommend serving Frontera American Single Malt with one large ice cube.

CALVADOS CASK FINISHED
The culinary charm of the coastal region of Normandie (Normandy), France lies in its creamy cheeses, rich seafood, and an abundance of apples and pears to make its famous ciders and Calvados brandy. Calvados is an apple brandy (sometimes a little but of pear) which is only produced in Normandie.
NORAMDIE
Normandie is our handcrafted Classic American Single Malt Whiskey, matured in new American White Oak and finished in ex-Calvados barrels. Calvados typically boasts flavors of green apple and citrus with hints of cherry and freshly-cut flowers.
OUR NOTES
On the nose, you may find caramel-dipped apples, sour cherry, and dulce de leche. On the palate, bright citrus brings up the front, with peppery notes across the mid palate. It finishes with short-but-sweet caramel and stone fruit. Our recommendation is to serve one large ice cube.

Ode to islay (Formerly Winter Release) is our way to raise a glass to tradition and pave our own way using Southwestern ingredients. Inspired by the heavily peated single malts of Islay, it’s made with mesquite instead of peat.

Ode to Islay is a more substantially smoked Dorado American single malt whiskey, matured in new American White Oak finished in ex-bourbon barrels. Bold while simultaneously refined.
Our Notes
On the nose, you may find cocoa nibs, cinnamon, charred mesquite, and earth. On the palate, are caramel-dipped apples, sour cherry, and dulce de leche. When neat, soft vanilla up front, blossoming into plumes of mesquite smoke and white pepper, tapering off into soft cinnamon and candied toffee. On the rocks, you may find the mesquite moves to the forefront, contrasting against new notes of vanilla and dried stone fruit. The pepper spice recedes, replaced by notes of honey and butterscotch. Or recommendation is to serve with one large ice cube.

For sentinel, we start with a sweet and bold straight rye and finish it in freshly harvested mesquited Whiskey Del Bac casks. It is then filtered across mesquite charcoal from our mesquited malting process, in an homage to the Franklin County method. Add a hot, Sonoran Desert summer.
The result: A striking straight rye befitting America’s oldest whiskey style while imbuing the essence of the desert Southwest.

Whiskey JYPSI by Eric Church
Introducing Legacy Batch 001, named “The Journey.” Because literally and figuratively, it has been one. And the result is a whiskey unlike any other. Smooth, complex and unconventional. A remarkably crafted blend of three fine aged whiskeys.
70% Indiana bourbon made from 99% corn and 1% malted barley. Distilled in Indiana, and aged 7 and 8 years for a smooth corn character, this bourbon component retains its rich and sweet corn character, with structure and depth from the cask.
21% Canadian rye made from 91% rye and 9% malted barley. Distilled in Alberta, Canada, and aged 20 years, this is a highly esterified and perfumed rye whiskey with pronounced butterscotch, spice and finesse that comes from spending the last two decades in barrels.
The last 9% of this remarkable blend is 100% malted barley from Indiana. Aged four years, this malt-forward American Single Malt has a beautiful balance of rich, nutty malt character – and strong vanilla, smoke and caramel notes borrowed from its new American oak casks.
And we called it Whiskey JYPSI to celebrate those who think differently, reinvent the rules, and seek greater adventure and purpose in life. Those who live life with a “JPYSI Spirit.” Like the remarkable team who’ve given birth to this remarkable liquid.

Whiskey JYPSI Explorer No. 2 by Eric Church
The Whiskey JYPSI Explorer Batch 2, inspired by Eric Church, presents a unique blend of craftsmanship and tradition. This bourbon hails from Kentucky and Indiana, aged for 6 years, and undergoes a distinctive finishing process in Hungarian oak and Tokaji wine casks. The combination imparts a complex flavor profile that includes hints of spice, fruit, and oak, which are balanced out by underlying nuttiness and a robust structure, culminating in a long finish.
It contains 66% corn, 30% rye, and 4% malted barley, striking a balance between strength and smoothness with a proof of 103.5 (51.75% alcohol by volume). Each bottle is a testament to the adventurous spirit of its creator, embodied in its rich, woodsy essence and a back story as deep as its flavors. Distilled in Kentucky and Indiana, this batch is meticulously blended and bottled by Whiskey JYPSI in Nashville, Tennessee, and is presented in a bottle that reflects its sophisticated and exploratory nature.

Whiskey Row Eighteenth Century Corn Recipe Bourbon
The Ohio River flows through Kentucky before meeting up with the Mississippi River in Cairo, Illinois. Along the riverbank in Louisville, there is a stretch of iron-clad warehouses known collectively as “Whiskey Row” where bourbon has been distilled and blended since the late 18th century. The early settlers discovered that corn would grow in abundance in the rich deep soil along the river. And settlers from Pennsylvania, Virginia, and Maryland also discovered that yellow corn made smooth-tasting whiskey. Whereas most of today’s bourbon whiskies have a recipe using around 70% corn, 20% rye or 20% wheat, and 10% malted barley, the newly arrived settlers and bourbon distillers used only corn. Our “Whiskey Row” Eighteenth Century Straight Corn Bourbon recipe follows that early tradition. You will love the sweet and crisp flavors distilled from Ohio Valley corn mellowed with the essence of vanilla and caramel naturally extracted for new charred oak barrels.

Leith was once the beating heart of Edinburgh’s whisky district, with its 100 warehouses boasting the world’s largest stock of whisky, including the forefathers of many of today’s famous brands, however, after the industry and port declined, even Leith’s whisky-inspired street names vanished until now. Today, Whisky Row has been resurrected and gives its name to the homecoming of blended whisky to Leith, putting Edinburgh firmly back on the whisky map.
