Tasting Notes

Nose: Rich, resinous, and sweet. Aromas of decadent ginger and spices are balanced by vibrant tropical characteristics like pomelo and mango. Subtle suggestions of Hong Kong-style egg tart, fragrant honey, and incredible antique oak.

Taste: Viscous and mouth-coating at first, bright tropical sweetness is followed by beautiful ginger and rounded spices providing great structure. Gentle waves of aged oak, grapefruit, and an umami-like depth.

Finish: Vibrant antique oak continues to shine.

TASTING NOTES

Nose: Sugared pan de muerto bread, creamy vanilla and sweet pineapple sit alongside fragrant marigold flowers and a hint of fresh green coriander.

Taste: Intense sweetness with flavors of orange oil and chocolatey Mexican mole with charred pineapple.

Finish: Sweet, with a delicate note of charred coals.

Matured in the finest combination of six casks, crafted from both American and European oak, this single malt whisky is bottled at 49.5% and delivers notes that reflect the artistic character and ingredients which define New York City. Celebrating the combined expertise of Whisky Maker Polly Logan and the Roca brothers, owners of El Cellar de Can Roca, this limited edition release of only 1000 bottles, distils the essence of this iconic city.

Tasting Notes: Big apple with peanut brittle and milk chocolate. A sweet and salty mix like a rising dough and a whip of sidewalks, fresh rain, and cherry blossom. Palate: Baked apple and raisin, chocolate-covered nuts, maple syrup, and toasted waffles with a side of salted pecans. Finish: Medium with roasted nuts and sweet oak. Hue: City Sunrise.

The rich mahogany hue of this 1989 Fine & Rare release from The Macallan is the result of decades of time spent maturing in a single European oak sherry butt cask. Distinct aromas of dark cherries, sweet treacle toffee, cocoa powder, and gingerbread. On the palate, amaretti biscuits, caramelized pineapple, a sprinkle of Demerara sugar, and rich treacle tart give way to candied fruits, plum jam, and a hint of dark chocolate. The multi-layered fish is long and complex. Filled on 12th December 1989 and bottled over 32 years later, this single cask is presented at its natural cask strength.

DISTILLED 2000 ~ BOTTLED 2024 ~ CASK №27

The glorious autumnal russet hue of this 2000 Fine & Rare release from The Macallan is attributable to almost a quarter of a century of maturation in a first fill sherry seasoned European oak butt. A comforting resinous aroma with subtle hints of fresh vanilla, ground coffee and white chocolate on the nose mingles with woody brazil nuts and a whisper of cinnamon. On the palate a fruity, buttery sweetness of chocolate covered raisins and brittle toffee gives way to the rich complexity of oak and forest fruits. Subtle cinnamon notes lend a spicy warmth throughout. The finish of rich oak, citrus peel, and lingering sweet spice dances long on the palate. Filled on 24th February 2000 and bottled 24 years later in celebration of the 200th anniversary of The Macallan, this single cask, the first Fine & Rare release distilled in the new millennia, is presented at its natural cask strength.

The rosewood color of this 1990 Fine & Rare release from The Macallan is the result of time spent in a first fill sherry seasoned American oak butt cask. Aromas of sweet honey, peach and raspberry tart, antique oak, and caramelized apple. Developing on the palate, orange and almond cask, vanilla and raisin, leather and forest fruits, nutmeg, licorice and iced cinnamon buns. The finish is long, interesting, and complex with a fresh and sweet twist and gentle spice. This single cask is presented at its natural cask strength.

This limited-edition release revisits “The Colossus of Nose,” an unforgettable 1980s billboard campaign that cleverly played on the grandeur of The Macallan’s signature aroma.

Encased in a beautifully designed, book-shaped box, Folio 8 includes a special commemorative booklet filled with vintage advertisements, anecdotes, drawings, and photographs, along with exclusive digital content. This edition pays homage to the brand’s heritage and the creative minds—David Holmes and Nick Salaman—who brought The Macallan’s essence to life.

The whisky itself is a stunning natural terracotta hue, inspired by the roof tiles of Jerez de la Frontera, where The Macallan’s cask journey begins. It boasts a rich, aromatic profile with golden sultanas, ripe dates, sweet berry compote, toffee brittle, lemon peel, cinnamon, and a touch of anise. The exceptional single malt whisky has been created by The Macallan Master Whisky Maker, Kirsteen Campbell to reflect the enduring character of James Bond, a force of nature defined by his Scottish heritage, who carries himself with modesty and humility. Like James Bond, the expression exudes a sense of style and maturity which has evolved over the years. It has a natural color of Suisse gold and an ABV of 43.7% as a homage to James Bond’s agent number, 007.

James Bond’s roots are unmistakably British – his heritage Scottish – yet he is the very definition of a man of the world. Born to a Scottish father, Andrew Bond from Glencoe and a Swiss mother, Monique Delacroix from the Canton de Vaud, he spent much of his childhood at Skyfall Lodge – his family’s Scottish Estate in Glencoe.
