The Deerslayer Venison Whiskey
$65.00The Deerslayer is a whiskey flavored with the flora and fauna of New Hampshire in autumn — in particular, venison. We sourced our red deer venison from a local New Hampshire farm, then hand-chopped the meat and tossed it with cranberries, porcini mushrooms, juniper berries, and green peppercorns. After fermenting overnight to accentuate the meat’s delectable gaminess, it is then slow-smoked over a mix of seasoned branches from New Hampshire’s boreal forests. A 3-year old white wheat whiskey serves as a lighter bodied whiskey backbone, allowing the truly unique flavoring to shine through after its final distillation in our rotary evaporator. Savory and smoky notes characterize this one-of-a-kind spirit, with a subtle spice on the palate and a lingering finish.

TASTE
Nose: Rich aromas of a traditional Christmas cake and Vermont maple syrup lead into powerful notes of ripe banana and sherry-soaked raisins with hints of dark chocolate adding depth.
Palate: Sweet golden honey mingles with Amarone and accents of dark cherries to add a velvety softness balanced by a dusting of rich dark chocolate to round off the palate. Rich and warming, yet fresh and well-balanced, with a subtle sweetness and a rich texture.
Finish: A long and viscous finish, with the lingering warmth of maple syrup and chocolate. Rich and oily, but not overwhelmingly so, and underpinned with a slightly dry finish, providing an indulgent and inimitable impression that remains on the taste buds.

TASTING NOTES
Colour: Deep, rich treacle
Nose: Butter toffee and chocolate fudge are followed by a rich maple syrup. Hints of brine and tobacco come to the fore after time.
Palate: A powerful combination of old leather-bound books with a hint of tobacco smoke. Silky smooth, with some cherry drop notes interwoven with ripe banana and caramel. The back palate gives way to Christmas cake spices that flow flawlessly into the finish.
Finish: A wonderfully long and decadent finale with hints of creamy meringue and vanilla cigar smoke that slip into a lingering finish of spice and sweetened leather.

By 1850, Sam became the first millionaire in California and the most famous person in the state at the time.

The GlenAllachie 10 Year Old Spanish Virgin Oak Finish
The GlenAllachie’s Virgin Oak Series sets out to explore the impact of oak provenance, terroir and genus on flavour development during the whisky maturation process.
To create this new whisky, the spirit was first matured in American Oak (Quercus Alba) ex-Bourbon Barrels before undergoing a finishing period in hogsheads made of Quercus Robur from the Spanish Cantabrian mountains with a cool yet humid climate. The oak was dried in open air for 18 months, then subsequently toasted and charred, to open up the pores for flavour extraction by the whisky.
TASTING NOTES
Colour: Mahogany
Nose: Lashings of orchard fruits, baking spices and sticky toffee pudding, with notes of brown sugar, glazed cherries and citrus.
Taste: Bursting with chocolate, coffee and heather honey, followed by notes of pepper, ginger and molasses, with banana and sultanas on the finish.

The Glenallachie 14-Year-Old 2009 Cask No. 446 – Impex is a remarkable single malt whisky that stands out with its unique and exquisite characteristics. Aged for 14 years, this expression was distilled on 07.09.09 and bottled in March 2024, resulting in a limited outrun of only 338 bottles. Its maturation process in an Oloroso hogshead imparts a rich and complex flavor profile to the spirit. The natural hues of the whisky reveal its authenticity, as no color additives have been introduced, and the non-chill filtration ensures a fuller and more robust character.

Master Distiller Billy Walker is celebrated for his peerless wood management capabilities. This flavourful single malt unites some of the most spectacular casks in our enviable inventory.
A rare species of Japanese oak, Mizunara is seldom used for whisky maturation due to its high cost and inclination to leak. The exceptional Mizunara barrels, combined with superior Oloroso puncheons and hogsheads, have created an incredibly indulgent and complex single malt.
We proudly present this Masters of Wood bottling at 50% ABV, natural colour and non-chill filtered, allowing its exceptional character to reign supreme.
Taste Profile
