Southern Grace Oloroso Sherry Cask Finished Bourbon 2021
Oloroso Sherry, from Jerez and Montilla-Moriles, in Andalusia, Spain, is fermented from Palomino grapes and casked in a traditional, years-long oxidative aging process that yields a rich, nutty aroma and the dark spicy notes of Madera Noble (Noble Wood). Conviction Straight Bourbon Whiskey has been aged in one of these casks, infusing the bourbon with the warm, complex characteristics that make Oloroso casks among the most sought-after on Earth.

Southern Star Honey Barrel Finished Bourbon
A tribute to craftsmanship that spans generations, Southern Star Bourbon Finished in Honey Barrels is a spirit elegant enough for a special occasion and delicious enough for a daily indulgence. A meticulous blend of local grains and a final year maturing in a wildflower honey-saturated barrel create a spectacular depth of flavor.
A few years back, a local honey producer had asked us for a barrel to age some of his honey in, to infuse it with the flavor of whiskey. After the honey had aged, they sent the barrel back to us — and the inside was still coated with honey. Of course, we couldn’t let it go to waste.
We filled the barrel with one of our select bourbons that had already been aging several years, and put it in the rickhouse for another 12 months.
When we finally tasted it, we were floored. It’s elegant enough for a special occasion, but so delicious you’ll want a taste every day.

These locally sourced ingredients are commingled in our traditional pot still, then barreled and aged for seven years. We carefully selected the very best barrels to blend as this limited edition Bottled in Bond bourbon.
Proofed slightly to 100 with water sourced from a nearby artesian aquifer. This minimal proofing reveals sweet aromatic notes of caramelized sugar, a balanced palate of dried fruit, and a deep amber hue. This is a remarkably regal bourbon.

Spirits of French Lick Hindostan Falls Bourbon
Hindostan Falls, located on the East Fork of the White River, was founded in 1816 and became an important stagecoach stop along the Vincennes Trail. Despite the land being rich and productive, flooding proved its demise. Today, the lost town remains a picturesque destination for visitors.
Our Alchemist merged over 150 varieties to create the Heirloom Corn in this mash bill. Cultivated on the Doty’s Hoosier Homestead farm adjacent to Hindostan Falls, we honor the lost town with this estate bourbon.

Spirits of French Lick Lee W. Sinclair 4 Grain
Lee W. Sinclair Bourbon is a 4 grain straight bourbon whiskey fermented at 85-90 degrees for four days from a mash of corn, oats, wheat and caramel malt using two distinct yeast varieties. The first yeast pulls out the grain profile and the second yeast pulls out fruity and nutty esters for distillation. The oats add a creamy mouth-feel to the profile and a sweet aroma while caramel malt, which is typically used for brewing, ads a layer of sweetened aroma over the base of the grains.

Spiritus Frumenti Whiskey
In the 1800s, American apothecaries used “Spiritus Frumenti” to track whiskey in their ledgers. Latin for “Spirit of the Grain” it would later be used as a generic name for medicinal whiskey during Prohibition. Spiritus Frumenti was produced by the George T. Stagg Distillery and other distilleries throughout the 1920s creating many iterations of Spiritus Frumenti.

Springbank 10 Year Old Amontillado Cask Matured
Springbank is unique among Scotland’s distilleries. Every part of the process from malting to bottling is carried out at the distillery. Springbank Single Malt Whisky is free of artificial coloring, also it is not chill filtered. This will cause a slight natural haze to form when it is cold but this will disappear when the temperature returns to normal.
This Springbank Single Malt Whiskey has been matured for five years in refill bourbon barrels followed by five years in fresh Amontillado hogsheads made from American oak,
