For this Distillery Reserve release, we started with our 2.5 year aged rye whiskey and finished it for 11 months in ex-Madeira casks for a rich, complex flavor profile. This exceptional spirit is paired with the bold artwork of Austin tattoo artist Dylan Mott. Each bottle is a testament to the artistry of distillation and the beauty of self-expression, making it a true Texas original.

Mash Bill: 100% brasetto rye aged four years in French oak.

Each month, Master Blender Nancy “The Nose” Fraley searches through our barrels of Straight Bourbon and selects one she finds to be exceptionally complex. After that, we simply open it up, bottle it as “cask strength” (meaning the whiskey is bottled at the same proof at which it was aged), and sell it exclusively in our tasting room. The result is a masterpiece of uniquely dark and complex flavors, intermingled with surprisingly bright notes and the exuberant spice of rye.

For this Distillery Reserve release we’ve paired the distiller’s art with the work of Texas writer, Stacey Swann. The 100% rye whiskey has been aged for 4 years, then finished 8 months in Ruby Red Port barrels. Opening with hints of mulled wine on the nose, the palate offers spiced cranberry Jin and chocolate-covered raisins. The finish is rounded out ‘Dy cocoa, wild berries, cinnamon, and light barrel spice.

While none of the spirits at the Stitzel-Weller Distillery are ordinary, a few of them, over the years, have been downright extraordinary. And traditionally, those were the ones we held close to the chest.

But great whiskey must be shared.

Our first special release is limited to around 100 bottles, from casks distilled by a historic Kentucky bourbon producer in 1999. Aged 24 years in American charred new oak casks, the spirit evokes cracked leather and saddle oil, with a sweet touch of burnt sugar rounding out the profile. We’ve bottled this straight bourbon at cask strength, which is to say: the whiskey leaves quite an impression. Although we recommend you enjoy it with a splash of water—the aromatics blossom on the palate at a lower proof—we like to take a short, sweet sip of the unadulterated whiskey each time we crack the bottle.

But how you enjoy it is up to you. Consider this an offering, the first of many to come, from our own very private collection.

Aged for 6 years in barns open to the warm summers and mild winters of Tennessee, Stone & Timber is bottled in small batches and is limited to just 16 barrels.

By letting nature take its course, our bourbon develops its character based on seasonal changes and extensive time spent in charred oak barrels. The result is subtle notes of caramel, vanilla, and slightly sweet oak.
