Our 75-25 Light Whiskey is unapologetically distilled above 160 proof then cut to 120 proof at the time of barreling. Resting in a new American Charred-Oak Barrel, this spirit is rich, flavorful, and in your face. With a bottling proof of 107 proof, this 75-25 Light Whiskey is best enjoyed neat or cubed.

Our small batch signature rye blend ages in new charred American oak barrels for a minimum of 4 years. This carefully crafted blend is then transferred into a Calvados apple brandy barrel for an additional 3-8 months. This finish provides notes of candied apples and vanilla to complement the fruit and rye spice of the whiskey.

Our Rye Whiskey is Made from sweet mash and distilled on our custom Cooper pot still to obtain the highest-end spirit. This Rye Whiskey is then aged in new 53-gallon, charred American oak barrels. After a minimum of 4 years of aging this whiskey is bottled at 100 proof under the Bottled-in-Bond Act of 1897.

Carl T. Is our signature bourbon, named after 4th generation family member, Carl Theodore Huber. After a minimum of 4 years of aging in new, charred American oak, this blend is finished in an Apricot Brandy barrel for an additional 3-8 months. This finish provides notes of stone fruit, vanilla, and baking spices to complement the characteristic flavors of our Carl T. Blend.

Carl T. Is our signature bourbon, named after 4th generation family member, Carl Theodore Huber. After a minimum of 4 years aging in new, charred American Oak, this bend is finished in icewine casks. The icewine provides notes of orchard fruit and honey to complement the rye spice and fruit of our Carl T. Blend.

This finish provides notes of dried dark fruits and brown sugar to complement the characteristics flavors of our Carl T.

This process provides intense baking spice aromas, sweet vanilla flavor, and cigar box notes to complement the Carl T. We then bottle at 1— proof under the Bottled-in-Bond Act of 1897.

Starlight Distillery’s straight bourbon whiskey is made by sweet mash fermentations which are then distilled in our traditional copper pot stills. Aging occurs in a variety of new, charred American oak barrels for a minimum of 4 years. This small batch blend uses one of our heirloom corns, bloody butcher, to showcase the unique qualities of each one of our corn varieties. At cask strength, this blend offers notes of dark cherry and caramel to complement the rich complexity of the bloody butcher corn.

Old Rickhouse is our small batch signature rye blend which ages in new charred American oak barrels for a minimum of 4 years. This carefully crafted blend is then transferred to another new 53 gallon barrel to finish for an additional 3-8 months. This process provides rich oak notes with enhanced sweet, rye spice.
