Barrell Bourbon New Year 2021 is a mixture of straight bourbons aged 5, 9, 10 and 11 years aged in American white oak barrels and bottled at 113.9 proof. These whiskeys were distilled in seven different states: KY, TN, IN, NY, TX, WY and CO.

Flavor Notes:

Every facet of this bourbon is enveloped in freshly scraped vanilla bean. The nose is minty fresh and woodsy, yet maintains a foundational cereal note of cinnamon raisin bagel. On the palate, experience a sweet, oily mouthfeel complemented by notes of demerara rum and apple pie spice. Adding water unveils rich chocolate and coconut, revealing a complex earthiness in the aroma.

Tasting Profile:

Appearance: Maroon, with tones ranging from rust to baker’s chocolate.

Nose: Pungent vanilla bean emerges first, woven with goldenrod as you approach the glass. The aroma evolves from dark brown sugar to woodsy sugarcane, preserving the original grain character. Advanced aging introduces notes of tres leches cake, granola, and macadamia nut, with herbal hints of sage, tonka bean, and menthol, rounded out by plump raisins and fig newtons.

Palate: Enjoy the balance of biscuit-y and sweet flavors with s’mores, amaretti, and oatmeal raisin cookie. A spiciness unfolds with notes of crystallized ginger, peppermint, and black peppercorn, while oak tannins provide a rich, chewy body. The palate features a humus layer of gentian root, sesame seeds, and apple peels.

Finish: Fresh ginger, fennel seed, and cardamom rush through the exhale, leaving a pronounced bitterness reminiscent of cocoa powder and grapefruit peel. Gradually, a gentle sweet vermouth takes over, later joined by a grainy signature of skillet cornbread.

Everything becomes coated in gooey chocolate ganache. Various forms of coconut—macaroon, oil, and water—shine through. Demerara rum takes over the palate, complemented by nutmeg and lime zest. The finish simplifies into notes of apricot and cherry eaux-de-vie.

The barrels harvested for this limited release were selected for their refined properties and extraordinary flavor profile. This complex 15-year-old bourbon was blended and bottled at peak maturity so you can experience its true flavor. It is a perfect union of grain and barrel, with an old, oaky nose and a deep, honey- maple palate that reveals the lushness of the grain.

BCS Gray Label Whiskey began with two selections of 24-year Canadian whiskey barrels: one set was fruit-forward and tropical, and one was woody, with a light floral aroma. A portion of the fruit-forward blend was transferred into Oloroso Sherry barrels and a portion of the floral and earthy blend was transferred into Armagnac casks. The remaining whiskey from the two groups was then combined to mingle. When the timing and flavor from the finishing casks peaked, the three components were carefully blended together. ​

The mature, spicy whiskey is front and center, reminiscent of wheat fields edged with wildflowers. There is a rare and noteworthy concentration of aroma, enriched with a candy sweetness and leafy earthiness from the finishing casks, that calls to mind a toasty Belgian waffle.

Distilled in Indiana, USA This unique Private Release Bourbon was selected exclusively for the 2024 Kentucky Bourbon Festival. A blend of straight bourbons was created to showcase bold fruitiness and bright citrus notes. The blend was then added to a toasted American oak barrel for 20 months. The result is a captivating bourbon with the perfect balance between oak and fruit.

At 7.5 years of age and bottled at cask strength, this 750ml bourbon boasts an impressive proof. The finishing touch in toasted American oak barrels enhances its complexity, ensuring a perfect harmony of flavors.

Distilled in Canada, this limited 19-year-old Seagrass rye whiskey showcases some of our finest stocks. Three different blends were crafted, each finished in a separate set of barrels, and bottled at cask strength for a true flavor experience.

A deeply mature rye whiskey with a grassy aroma and fresh notes of aged Rhum Agricole. On the palate, the rich rye is balanced by the nutty, oxidative character of madeira, brightened by the fruity splash of apricot brandy. The finish reveals the whiskey’s signature maritime minerality.

Appearance: Rich golden straw

Nose: A showcase of exotic spices—caraway, fenugreek, dill—and the bready depth of rye toast and roasted taro. Rhum Agricole barrels enhance grassy notes of cucumber peel and bark mulch, while the oak brings out cigar tobacco, coffee, and cinnamon.

Palate: Oily texture with peanut, coconut, and tea tree oil notes. Creamy soy milk and cocoa butter evolve into bright lemonade and nutty sunflower seed flavors, thanks to the madeira barrels, with hints of grapefruit peel and verjus.

Finish: The apricot brandy casks bring out passionfruit, mirabelle plum, and banana peel, followed by rye and mineral notes of chalk dust, flint, and cedar smoke.

Nose: Fresh coastal breeze, maraschino liqueur, cloudberry, and green apple.

Palate: Sweeter with marmalade, burnt marshmallows, and roasted chestnut, alongside woodsy notes of balsam, wild mint, and raspberry leaf.

Following this initial wave, notes of apple fritter, cinnamon, nutmeg, honey-roasted almonds, and orange peel emerge. As the glass fully opens, fresh orange juice, fine black pepper, vanilla, hazelnut, and chocolate-covered cherries come to the forefront, along with enticing hints of brûléed banana, warm bread pudding, and a touch of sweet leather.

Palate:
The entry is warm and creamy, with flavors of orange sponge cake, lightly roasted coffee, and rich caramel leading the way. As the sip evolves, notes of cinnamon, dark chocolate, cream puff, and fresh mint emerge. This release of Gray Label Bourbon is constructed from bourbons of varying ages from five different mash bills. After marrying, the blend goes into casks made using 36-month air-dried staves that previously held Gray Label Bourbon, to rest and further mature.

Barrels made from 36-month air-dried staves are not often used in bourbon production, in part because they are much more expensive than casks made with kiln-dried staves. We view them, however, as a key component for achieving long, complex flavors and a rich mouth feel. The result of mingling in these unique casks is a mellow, sophisticated spirit that concentrates the flavor of a higher-proof bourbon into a lower-proof blend, with a gentle oxidative character and deep dried fruit notes. This is a bourbon with the complexity and density of age, with our over-naked chalkiness or an overly aggressive ethanol bite.

The Barrell Private Release Bourbon series is an exercise in micro-blending and variations on a theme. We select a variety of bourbons spread across 4 different ages and blend them into 48 different recipes. Each blend number has its own ratios, printed on the label and is constructed in its own ex-bourbon barrel. With each release, a new set of base bourbons is selected, so every recipe is only made once.

Barrell Rye Batch 003 is a mix of rye whiskies from Indiana, Poland, Tennessee and Canada, featuring a selection of 4-, 6-, and 14-year-old barrels. The team started with Tennessee rye barrels with caramel and dried fruit notes and then added the Polish rye for its nuttiness and mouthfeel. They then layered in the 13-year Canadian rye to bring out earthy notes. The Indiana rye was for balance.

10-year-old Indiana Rye barrels with notes of brown sugar and a touch of smoke had 5 and 6-year-old barrels layered in for fruit and spice character. 14-year-old Canadian barrels were added for their dry herbal notes. The result is fruit-forward rye with layers of depth.
