70% Corn, 21% Rye, 9% Malted Barley

Rebecca Creek Distillery had an opportunity to utilize new Spanish Oak barrels as a rare approach to age their bourbon for 4 years before blending it with a 5-year whiskey aged in American Oak. Spanish Oak is a much softer wood with wider grains that absorb more whiskey than the typical American Oak causing the whiskey to easily pull a stronger wood palate with pronounced notes of vanilla along with a dark, rich color that resembles whiskey twice its age. This blended combination was then complemented with South Texas’ Edward’s Aquifer limestone-filtered water creating a whiskey that followed the true spirit of Texas.

Rebel 10-Year Single Barrel Bourbon is a meticulously aged and independently hand-bottled whiskey at 100 proof (50% ABV), offering a unique flavor profile for each batch. This annual release embodies Rebel Bourbon’s time-honored wheated recipe from 1849. The golden amber spirit delivers a nose of vanilla, dark fruits, citrus, and oak, a palate rich in caramel and citrus, and a velvety smooth oak finish with a hint of spice. Each bottle features the barrel number and ‘aged since’ date, highlighting its bespoke nature. Rebel Yell Cognac Cask Finish has been aged for at least four years in American oak barrels and finished in cognac casks for a further six months. Enjoy notes of oak and dark berries on the nose, followed by notes of caramel, toasted sugar and raisins on the palate.

Recuerdo Mezcal 5″ KO Limited Edition Reposado is made from choice Agave Espadín plants and is crafted with traditional techniques, cooked over river rocks with certified pine and oak woods to achieve an environmentally friendly product. 

The river rocks are collected from the higher elevations of Oaxaca’s central valley rivers. Rocks and woods utilized at our distillery in Oaxaca are certified by the SEMARNAT (Mexican ministry of environmental protection), to ensure that we take care of the planet’s biodiversity through responsible and sustainable management of the local forests. Mezcal is a protected designation of origin.

Tasting Notes

• Nose:
  Delectable berry fruit aromas of ripe blackcurrants and raspberries accompanied by sugar glazed cherries and dried fig. Indulgent tones of hazelnut chocolate and caramelized stone fruits with warming and fragrant notes of toasted almonds and cinnamon, nestled alongside polished oak and worn leather.
• Taste:
  Full-bodied and rounded, with the oak tannins complementing the decadent sweetness of sun-kissed grapes and autumnal fruits. Vibrant spices of freshly peeled ginger and hints of liquorice weave amongst the wine-seasoned oak influences of dried fruits, dark berries, and orange peel.
• Finish:
  Rich and lasting. The pot still spices, fruit, and oak slowly fade harmoniously, showcasing the balance of this wonderfully complex whiskey.
