The 9, 10, and 13 year-old barrels were chosen for their peppery assertiveness, making this “spice box” marriage wonderfully robust yet a little rough around the edges. We refined the blend by adding in citrus forward, lower proof, 15-year-old barrels bit by bit, ensuring that the rye forward base would continue to shine, while delivering a lush mouthfeel.

Barrell Bourbon Batch 028
Barrell Bourbon Batch 028 is a blend of 10 and 11-year-old barrels created from a marriage of three distinct sub-groups of barrels. The first was aroma forward with notes of tropical fruit, citrus zest and exotic spices, identified to drive the nose of the final blend. The second group had a richness in the middle palate and a sweet, almond-like body. The third group was peppery and tannic, adding backbone and a savory, woodsy and earthy component. The final blend of Batch 028 allows each of these groups to shine through. It presents a bouquet of ripe tropical and sweet flower aroma backed up by a robust punch of rustic wood in the cadence and finish.

$89.99Barrell Bourbon Batch 026 was created by combining 9, 10, 11, 13 and 15-year-old barrels in several blending steps. The first was a fusion of 9-year-old high rye barrels peppery and pointed on the palate, 10-year-old oak forward barrels, and sweet, toasty 11-year-old barrels for mouthfeel and classic baking spice notes. The second balanced citrus forward 10, 12 and 15-year-old barrels with spicy, floral 9-year-old high rye barrels. These two blends were gradually co-mingled resulting in an intriguing bourbon that dances between fruit and spice long into its finish.

Barrell Bourbon Batch 31

The blend was built around the sweetness in a group of 99% corn Bourbon barrels and a group of wheated bourbon barrels. To bridge these two groupings, we layered in 15 and 16-year-old barrels for their gentle nuttiness and oak. Finally, a selection of 10-year-old barrels was added to bring notes of milk chocolate and tropical fruit.

A perfect autumn release, this batch’s notes of shortbread cookie, pumpkin pie, peppermint latte, and pine needles match the mood of sweater weather.
Appearance: Deep gold
Nose: A rush of dry, notable oak, incorporating wormwood, tobacco, and pine needles. Curious and sweet with browned butter, candied walnut, and spiced apple pie. Other notes balance between woodsy and floral, such as thistle, milkweed, and poppyseed. As we emerge beyond the scope of oak, we find some fruity and sweet cream notes, the latter represented by peppermint latte and vanilla creme anglaise.
Palate: Moderate sweetness and juicy citrus make for quite an easy pour. The fruit sings loudest here – pomegranate juice and strawberry rhubarb pie. Extractive elements of spice and tannin bring quince and ginger beer into the equation. The baking spice nods toward a Manhattan garnished with an orange twist. Finally, some marshmallow root and pumpernickel take it in an earthier, cardoon-like direction.
Finish: A quick burst of heat announces smoked paprika, black peppercorn, and spearmint. As it subsides, demerara rum and black cherry soda emerge. Finally, it fades to leave only a little chalk and slate.

Barrell Bourbon Batch 36
A multi-mashbill blend was created by combining full-bodied barrels with black cherry notes and oak-forward barrels with a nutty flavor profile. After these mingled, younger barrels with stone fruit and peppery highlights were added to the blend. Lastly, older barrels with notes of milk chocolate, cinnamon, and pecans were carefully layered in. The result is an elegant bourbon that is opulent on the finish.

Barrell Bourbon Cask Finish Series: Amburana

Amburana casks are challenging to work with, as they impart strong cinnamon, nutmeg, clove, and vanilla spice notes. True blending expertise is required to enhance the bourbon with Amburana and maintain balance. The BCS blending team created a bourbon blend of two mash bills with different char levels finished in Amburana casks. A batting of individual casks without finishing was layered in to add depth, richness, and complexity, ensuring the bourbon shines through first and foremost. Only 14,400 bottles produced.

To make an exceptional ice wine, optimal conditions and great care throughout the entire winemaking process are required. The BCS blending team took the same meticulous approach in carefully selecting barrels and creating a blend of mashbills and ages to harmonize with the intense sweetness, rich texture, and lively acidity of the ice wine. The resulting bourbon is bright and complex, with a rich body and notes of stone fruit and white chocolate. Blended to never blend in.™”

Barrell Bourbon Cask Finish Series: Mizunara
Distilled in KY, IN, & TN, USA.
Casks made from rare Mizunara hardwood are a true work of art. The wood is meticulously cut, and the barrels carefully raised due to the wood’s characteristics. Mizunara finishing imparts subtle notes of sandalwood, herbal spice, and coconut to bourbon, and precision is required to craft a harmonious blend. This cask finish bourbon was expertly blended using multiple mash bills finished in Mizunara casks for one and a half years.

Pedro Ximénez, often abbreviated as P.X., is a dessert wine from Spain, renowned for its rich, intense sweetness. P.X. wines typically feature notes of dried fruits, velvety chocolate, and toffee. In crafting a harmonious counterpart, the BCS team meticulously blended select straight bourbon whiskeys to enhance and complement the sumptuous flavor derived from the P.X. barrels. The result is a rich, full-bodied blend with layers of toasted coffee, golden honey, and candied fruit, offering a sophisticated balance of depth and sweetness.

Barrell Bourbon Cask Finish Series: Tale of Two Islands
Distilled in IN and MD, USA. In 2018, we produced the legendary Tale of Two Islands Rum: a Jamaican Rum matured in peated Islay single malt barrels. Those empty casks have been used to finish a blend of straight bourbons. The sweetness of the rum and the smokiness of the Islay casks mingle together with the underlying bourbon that continues the Tale of Two Islands. Blended to never blend in.

Barrell Craft Spirits Gold Label Bourbon is a blend of straight bourbons aged up to 18 years. Barrels for this release were selected from four different collections: barrels with rich cherry and nutty notes, spicy tropical fruit-forward barrels, barrels with pronounced herbal and dark chocolate notes, and barrels with oak-forward coconut notes.
