In 1874, Adam and Ben Chapeze created the now famous Old Charter whiskey brand. Named in honor of arguably the most well-known white oak tree in America, Old Charter Oak symbolizes the pivotal role that oak barrels play in making of great American Whiskey. Old Charter Oak reveals the hidden flavors in a wide array of oaks as they influence this diverse collection of bourbon whiskeys.
Aged at Buffalo Trace Distillery, this Bourbon gains it’s unique character from being aged in the finest oak barrels from Canton Cooperage. The distiller’s silent partner, the oak barrel gradually influences the spirit’s flavor, with the quality of the barrel’s wood giving the distiller the ability to subtley adjust the flavor to fit their vision. Harvested from the forests of the best American white oak, these trees were made into staves that were carefully hand sorted and selected. Stacked with a specific technique in the Canton Kentucky wood yard, they are then seasoned in the open air and moisture to ensure optimum open air seasoning. Old Dominick All The Cookies Bourbon
There are a lot of things I love about being a distiller, but two that get me excited are innovation and collaboration. And it is these two things that led to this unique beer-barrel-finished bourbon. My friends over at Meddlesome Brewing had been asking for used bourbon barrels for months, and when they finally go them, they took it to the next level. Their All the Cookies Ale was one of my favorites and I couldn’t wait to combine that oatmeal raisin cookie flavor with our Huling Station Bourbon. I hope you enjoy It as much as I enjoyed creating it.

There are a lot of things I love about being a distiller, but two that get me excited are innovation and collaboration. And it is these two things that led to this unique beer-barrel-finished bourbon. My friends over at Meddlesome Brewing have been asking for used bourbon barrels for months, and when they finally got them, they took it to the next level. Their This Is Hipster Barista Stout has such wonderful dark chocolate and roasted coffee notes, both of which pair beautifully with the stone fruit and chocolate notes of our Huling Station Bourbon. I hope you enjoy it as much as I enjoyed creating it.
