The Ol’ New Riff whiskey project seeks to recover lost histories and recipes for the modern era. Our whiskey makers examined every facet of the production process and tweaked all the dials back to the gilded age-when greater Cincinnati ruled the whiskey market. The 19th century-style barrels were produced without modern kiln-drying and heirloom Ohio valley grains, including Blue Clarage and Yellow Leaming corn and our acclaimed Balboa Rye, were mashed into a classic bourbon grain bill with higher malted barley corn with higher malted barley content. Of course, our aquifer water, pulled clean and cold from ancient rock, remains unchanged-and was used to cut to a barreling proof of 103.

Old Bourbon County Kentucky Straight Bourbon
Bourbon County was founded in 1785, seven years before Kentucky gained her statehood. In the wake of the American Revolution. Bourbon County was named after the French House of Bourbon and encompassed 1/5th of the territory. The Scotch-Irish frontiersman that settled in Kentucky brought their love and knowledge of distilling. Those early settlers crafted a sweet, corn whiskey from limestone-filtered water aged in charred oak barrels in the mild Kentucky climate.
These pioneers floated barrels of whiskey down waterways to the port of New Orleans where the distinctive Kentucky spirit became known as bourbon whiskey, named after the county of origin. As the region was separated into smaller counties this area of Northern-Eastern Kentucky became known as Old Bourbon County.
Hartfield & Co. Distillery, the only distillery in modern-day bourbon county, proudly presents old bourbon county – a spirit hand-crafted from corn. Wheat and malted barley in the birthplace of bourbon whiskey.

Each barrel starts as an oak tree in a forest. Enduring the heat of summer and winters that cut to the core, these oaks must stand the test of time before beginning their journey to becoming a barrel.
Every cut matters. White oak logs enter the mill and only the finest leave as rough staves, quarter-cut into the exact specifications for cooperages to create barrels that will hold whiskey for years.
It all comes together at the cooperage. Rough staves are seasoned by the elements for months—sometimes years—adding even more character to the oak. From there, a vessel for whiskey is created and the inside is charred to exact specifications.

Old Charter Oak Chinkapin Oak
$69.99Old Charter Oak Chinkapin oak earned much of its character while aging for nine years in special barrels made from Chinkapin Oak trees. Prior to being assembled into barrels, the oak staves from these tall trees air-dried for two years, far longer than the industry-standard three months. As the bourbon matured at Buffalo Trace Distillery, the flavors from the oak became more complex, developed by the climate and changing seasons. The result is a bourbon uniquely shaped by the barrel, with notes of cherries and spearmint, a palate of fresh herbs and honey, with a finish of warm baking spices and dark chocolate.
