This removed the ability to carry the “bourbon” same traded instead for unparalleled smoothness and flavor, well worth the sacrifice. The whiskey then reached maturity in some of the best rum casks on the planet, bringing a dark sweetness not found anywhere else. The 3 releases bear the names of 3 of the most notable pirate vessels to ever break water near the shores of Barbados. Liqueur Eau D’Or By Emilia Clarke is carefully crafted by the master distiller of Versailles under Louis the 14th, our liqueur was deemed to be a luxury product reserved for the royal court due to its expansive constituent ingredients- citrus fruits: Oranges and lemons, cane sugar and orange blossoms.

Using an original recipe that resurrects the Eau d’Or of the 21st century, we have kept the original list of ingredients but altered the product balance to adapt it to the tastes of our century.This liqueur with its shiny golden glints will be marketed as a classic version as well as a version aged in French oak barrels to concentrate the aromas even further.

The crew at Olives and Oil filled a used bourbon barrel with an 8-year old imported Modena balsamic vinegar and let it rest for a year. We then bottled it to use in our restaurant and sent the empty sweet vinegar-kissed barrel to Litchfield Distillery to fill with their CT-Made bourbon. The result is a delicious blend that starts with tart, sweet acidic notes highlighting the balsamic cask, and then with sweet corn, oak, and caramelized sugar. Try it neat, in a Manhattan, sidecar, or whiskey sour.

As the 8th Generation Master Distiller, Fred B. Noe Distillery, Freddie Noe pays homage to his Grandaddy Booker by naming his first “Little Book.” That’s the name Booker gave him, and now this spirit – just the kind Booker would’ve loved – is what Freddie’s giving back.

For Little Book Chapter 4, Freddie followed his curiosity to create a new taste profile greater than the sum of its parts. From each spirits’ mash bill and age to where they were stored in the rackhouse, there are a million decisions that go into the final blend. The possibilities are endless.

Little Book Chapter 5 is a blend of straight whiskeys bottled at 116.8 proof. As the 8th generation beam distiller, Freddie Noe pays homage to his Grandaddy Booker by naming his first spirit “Little Book”. That’s the name Booker gave him, and now this spirit – just the kind of whiskey Booker would’ve loved – is what Freddie’s giving back.

“To The Finish” is a blend of five liquid streams all distilled under Noe’s watchful eye. The 4-year-old Straight Malt Whiskey liquid streams all start as the same American Single Malt Whiskey but are aged separately with different wood staves and barrel techniques to impart a unique taste profile. Once the liquids are individually dumped, they are blended back together in different ratios before a 5-year-old Kentucky Straight Bourbon is added to create the final blend. The result is an extremely approachable liquid, even for those who have yet to try a cask strength whiskey.

This exquisite blend brings together a variety of ages and styles, including an 18-Year-Old Kentucky Straight Bourbon Whiskey, a 17-Year-Old Kentucky Straight Bourbon Whiskey, a 10-Year-Old Kentucky Straight Rye Whiskey, and more. The resulting liquid is approachable even for those new to cask strength whiskey, a testament to Noe’s skill in crafting balanced flavors. In 2012, Fred Noe, 7th Generation Beam Family Master Distiller, asked his son Freddie if he was sure he wanted to be in the family business. Freddie didn’t hesitate – he said yes.

Freddie took on roles across distillery operations to learn the ins and outs of the business.
