Kamut is the trade name of one of the world’s oldest wheat strains, Khorasan. This ancient grain remains in its purest form—organic and unchanged. Legend has it that a U.S. Airman acquired seeds in Cairo, reportedly stolen from an ancient Egyptian tomb. Khorasan wheat was believed to have been buried with the pharaohs. In 1964, the grain caught the eye of 16-year-old Bob Quinn, who later, with his father, planted 1.5 acres to be farmed traditionally. This ancient grain remains unchanged from its original form, offering a high yield with larger kernels than modern wheats and a rich, nutty flavor. Enjoy this special whiskey.

The golden Sunlight in this piece represent sparks of hope, lighting the path toward the Kavalan dream. The fiery red denotes both the intensity of purpose and the heat of the sun, the same life-giving warmth that uniquely enhances Kavalan’s ageing. Matured in red wine barrels from the finest wineries in Bordeaux, France, this opulent whisky has a rich aroma with full-bodied texture. The final piece in the set is both homecoming and rebirth. The green, yellow, and blue represent Taiwan’s East Coast’s lushness and the vibrant flavours and scents of Kavalan whisky. This Mother Earth bears the fruits of labour for both Kavalan and Mr Chiang and the seeds for new growth. The Kavalan dream becomes a reality. Using malt smoked with deep-mined peat, Kavalan’s signature tropical fruits are infused with the peated smokiness in this one-of-a-kind drop. An earthy depth and complexity is exquisitely layered with fruit and accentuated by Kavalan’s unique Shave, Toast, and Rechar (STR) technique on the barrels, for a unique maturation.

The indigenous name, Pisilian, refers to a stretch of Taiwan’s eastern coastline, connecting Kavalan’s home in Yilan County with Taitung County where Paul Chiang is based. Kavalan’s story, or dream, starts in the Ocean under a starry sky. From here, moisture rises and eventually condenses above Snow Mountain, creating Kavalan’s legendary water source. Aged in Puncheon casks, and as rare as deep ocean treasure, this whisky is effortlessly smooth in texture with an ocean of complexity, and waves of tantalising flavour.

Solist French Wine Cask is aged in an exclusive red wine cask from a superb French winery with a rich composition of subtropical fruits, cocoa, and tannins. The mastery of this fine dram lies in its rich layers of sweetness, well-balanced acidity, and sprinkle of mineral saltiness.

TASTING NOTES

Colour: Plum compote

Nose: Begins with a concentrated mélange of pomegranate, soft honey, and deep tannins, complimented by the rich aromas of sweet melon, guava, and apple. Next, a backdrop of Tropical fruitiness, passion fruit, and soft peony-floral notes are overlaid by a powerful rush of luxurious dark chocolate, dried fruits, blackberry, black cherry and grape.

Palate: On the tongue, a captivating vanilla sweetness and subtle saltiness prime the taste buds for the chewy fig and luscious plum that push to the fore. These flavours give way to the mouth-drawing taste of fresh juicy grape and ripened melon. Long but fresh in the finish, perfectly balanced, with the taste of lingering melon syrup leaving you desirous of more.

Finish: The overall flavour is delicate and elegant, with an impressively strong finish.

Named after a Felix Mendelssohn piano piece, Paul Chiang’s circular brushstrokes imagine effervescent air particles and the beating of wings, creating the sensation of air in motion. The Kavalan dream takes flight in Air, and this painting can be seen as an artistic rendition of whisky’s maturation process. Virgin oak barrels form the body of this Kavalan symphony in which sweet notes of tropical fruits and honey are generously infused.

Kavalan Triple Sherry Cask Single Malt Whisky is a rare combination of three exquisite sherry-aged casks — Oloroso, Pedro Ximénez, and Moscatel — with the dried fruits of Oloroso as its main character. Rich caramel and the sweetness of maltose are layered with the distillery’s unique tropical fruits to create a delicate but distinct sherried whisky that can be enjoyed on easy-drinking occasions with friends.

Nose: Ripe, mature berries and dried fruits fill the nose, with fresh scents of grapes and citrus interlaced with chocolate brownie and toffee sweetness. Hints of cinnamon, clover and spiciness, blending into pleasant oakiness and fragrant rosemary.

Palate: Lingering flavours of sherry dried fruits. Warm and smooth with a mellow texture. A lively flamenco dance of candied fruit, caramel, and honey sweetness on the taste buds. Multi-layered and perfectly balanced, it’s an unforgettable feast for the palate.
