We began our Iron Fish journey on the Isle of Islay, a deceptively hard place of stone, sea, and foundational whiskey. The very casks of that peat-smoked land make for this barrel-strength reunion, pairing our carefully sourced rye whiskey with the aged wisdom of our Scottish elders.

Back when they were digging the big ditch that would later become the Erie Canal, farmers from up this way would take their excess grain and create the best Rye Whiskeys east and west of the Mississippi. It is in that tradition that we bring you the hand-crafted goodness of our Iron Smoke “Farmers” Rye Whiskey, aged a minimum of two years. Enjoy this nostalgic piece of our history, a tradition since the days of the Whiskey Rebellion way back in 1794, which celebrates true American grit, rebellious spirit, and passion for great whiskey making.

To commemorate Iron Smoke Distillery’s 10th anniversary, we present a very special and extremely limited release, “Bottled In Bond.” The “Bottled In Bond Act of 1897” was established to create a high-quality standard for bourbon whiskey.

It authorizes that the bourbon must be aged for at least 4 years, bottled precisely at 100 proof, made by one distiller at a single distillery in one season, then aged in that distillery’s bonded warehouse.

Following these guidelines, Iron Smoke B.I.B. guarantees that this small batch is made from the highest quality local ingredients and delivers to pay homage to the great American distilling tradition.

Iron Smoke’s “Bottled In Bond” release is a testament to our craft and the legacy we continue to build in Fairport, NY.

2022 was a great year to be a Jayhawk. We hung a banner in Allen Fieldhouse, our football team went bowling for the first time in 15 years and the first edition of Rock Chalk Rye hit shelves all over the state of Kansas.

We’re kicking off 2023 with a second edition of Rock Chalk Rye, featuring the 1920 Jayhawk. Let’s raise a glass to the successes of 2022, and more importantly, the great things that lie ahead this year.
