Doc Swinson’s Alter Ego Triple Cask Bourbon
When it comes to the Alter Ego Bourbon, we changed our finishing process to include two different types of Sherry Butts (PX & Oloroso), Cognac Puncheons and a long resting period in ex-Cognac Foeders to finish the marrying process.
This system took a while to build for several reasons, one of which was our desire to work with specific Sherry Butts from one of the oldest regions of fortified wine.
It took us some extensive searching before we found these Butts from Montilla-Moriles Spain where their Sherry Solera Pyramids date back to the 1920’s!

Doc Swinson’s Exploratory Cask El Cuerpo Bourbon
Part 3 of 3 of our Alter Ego Triple Cask Bourbon. To round out Alter Ego Triple Cask Bourbon, we like to add a hint of what Pedro Ximenez casks bring to our blender’s cut thirty-six twenty-one base blend. These carefully selected sherry butts from Spain held sherry for over 20 years and contributes traditional notes of dried figs, cherries, and chocolate as well as strengthening the body of the bourbon. Doc Swinson’s 7 Year Old Bottled in Bond Straight Rye

This act ensured that any whiskey bearing the name “Bottled-in-Bond” was produced by the same distiller, at the same distillery, during the same distilling season, aged for at least four years, unadulterated (except for water) and bottled at exactly 100 proof.
These regulations gave assurance to the consumers they were drinking an unadulterated whiskey and helped define the very American whiskeys we know and love today.

Doc Swinson’s Blender’s Cut Bourbon
After numerous releases of our Triple Cask Alter Ego Bourbon, Jesse Parker, Doc’s blender, started to notice a late-night trend as we sampled the base bourbon. After witnessing a copious night in the warehouse with glasses that refused to be set down, it became apparent that the blenders cut needs to be shared! Thanks to Jesse, this delicious mixture of 36% and 21% rye bourbon lingers on the palate and brings waves of vanilla, brown sugar-covered apricots, peanuts, & brown butter is now available to you! We’re sure you’ll find yourself enjoying late nights with Jesse’s blender cut too!

Doc Swinson’s Blenders Cut Ninetyfive/Fiftyone Straight Rye

Using a unique method of blending developed by Jesse Parker, Doc’s Master Blender, called “blending to proof” allows emphasis on flavor and viscosity while maintaining a cask strength statement. You’ll find this blend of rye whiskeys lingers on the palate, bringing aromas and notes of vanilla, poached pears, cinnamon apple pie crust, and toasted oak. We believe you’ll enjoy this whiskey as much as we do!

Doc Swinson’s Bossa Nova Straight Bourbon
When Brazil comes to mind, we often think of the Amazon Rainforest, epic football tournaments, white sand beaches that stretch as far as the eye can see, this exotic finish is exactly that! A bountiful expression of butter cream, vanilla and cinnamon notes will fill the room, transporting you to memories of fresh baked snickerdoodle coming out of the oven.
“Bossa Nova” is a genre of Brazilian music inspired by Samba and Jazz and literally translates to “new wave” but the word “Bossa” is also an old Brazilian slang word meaning something done with particular charm. We feel this “new charm” (Bossa Nova) was a fitting name for this bourbon whiskey finished in Brazilian Amburana wood.

Doc Swinson’s Exploratory Cask Funky Drummer Rye
Weighty high rye meets Jamaican Funk flavor, Funky Drummer is a 7-year-old 95% rye whiskey that has had a long rest in some seriously funky Jamaican rum casks (Look up dunder pits if you want some fun info!). These casks are full of tropical flavors that marry nicely with the heavy rye spice. It took some serious time locked away to get these flavors to play nicely together, but when they did Woah, sweet and spicy! Doc fans line up for one of these limited Barrels, make sure to grab a bottle if you see it!

Doc Swinson’s Exploratory Cask Kiona Cask Bourbon

Kiona vineyards founded the red mountain ava in the early ’70s when they planted the old block section of their vineyard. The fine folks at Kiona kindly gave us these freshly dumped old block Cabernet Sauvignon barrels. After resting in these barrels for 18 months to bourbon picks up wonderful red currant and tart cherry notes as well as a beautiful ruby hue. This is an extremely small-batch, local-only release. Doc Swinson’s Exploratory Cask L’Esprit Bourbon
Part 1 of 3 of our Alter Ego Triple Cask Bourbon. French brandies are the birthplace of modern distillation and an inspiration for many of the spirits we produce. Cognac casks bring flavors of pepper, raisin, earth, nuts, and citrus. These cognac notes really bond with the base of this whiskey, our own thirty-six twenty-one blender’s cut. Doc Swinson’s Exploratory Cask La Mente Bourbon
Part 2 of 3 of our Alter Ego Triple Cask Bourbon. This one is pretty special, oloroso sherry is the first barrel finish expression we started with at Doc Swinson’s. That’s right, the one that started it all! We found this to be one of our favorite finishes, as it plays exceptionally well with our base whiskey, Doc thirty-six twenty-one blenders cut bourbon. We find that oloroso sherry adds significant complexity & mouth feel while layering in notes of roasted nuts, spices & orange peel.

Doc Swinson’s Exploratory Cask Pineau Des Charentes Bourbon
Pineau Des Charentes is a truly unique French aperitif, produced from a blend of fresh grape juice and young cognac, which is then aged in French oak barrels for several years. We let Doc Swinson’s blend of two five-year bourbon whiskeys rest in these barrels for several months, bringing hints of apricot, orange marmalade, and wildflower honey to the already delicious caramel and stone fruit notes of the bourbon. Doc Swinson’s Exploratory Cask The Forgotten One 16 Year Bourbon

In the midst of that shift, dozens of our casks were delayed and stored in our warehouse before being rediscovered. This bourbon was one of those delayed projects and spent a little extra time in the casks gaining an exceptional array of flavors. This release spent 12 years in American oak, followed by 4 years in two very distinct Madeira casks – one sweet and one dry.

Doc Swinson’s Exploratory Cask Tres Amigos Rye
Doc Swinson’s blend of two five-year mash bills was first finished in our ex-rum cask solera for an additional year before our blender decided to play around with a few Añejo tequila casks. The result is a plethora of flavors starring rich and spicy whiskey, supported by peppery and sweet agave and funky fruity rum; a true piñata of goodness. Remember, wherever good drinks and great times are to be found, you will find the Tres Amigos!

Doc Swinson’s Garryana Straight Bourbon
Exploring new oak species has been a major focus for our Master Blender, Jesse Parker and when the opportunity to work with our own local Pacific Northwest oak, Quercus Garryana, Jesse jumped on the opportunity. Quercus Garryana, or more commonly called Oregon oak is found growing on the Pacific Coast from Northern California to Southern British Columbia, it runs through Doc Swinson’s backyard. This marriage of our signature whiskeys and Oregon oak barrels really showcases the richness of the Pacific Northwest terroir offering deep, dark, and complex notes ranging from molasses, toffee clove, Italian plum and wood smoke.
